Ahhh, February, how we love thee. After running full speed ahead in January, it feels that much sweeter to wind down, get a much-needed pedicure, and indulge in a glass of wine and a few tasty morsels of dark chocolate. (You deserve it.)
On that note, you’ve probably been so busy that you haven’t even thought about planning something special this Valentine’s Days. Begin your day with some deep breathing and meditation. Kick off Valentine’s Day by doing some early morning yoga or aerobics at our onsite Fitness Center.

After a refreshing workout, you will most likely have worked up an appetite. Pack a yummy lunch with all of your favorite fixins and set up camp on a table at Huntington Park. There’s even a beautiful view of our very own Sand Dollar Lake!

Since you’re already in Bethany Beach...stick around and explore the area! Between all of the unique shops and fabulous eats, you and your friends or (your partner) can make a full day out of it.
Walk the Boardwalk
Ice cream, souvenir shops...you’re going to love walking around the Bethany Beach Boardwalk. After lunch, grab a cone with your sweetie and take in the sights.

CRISPY RAVIOLI WITH RED PEPPER & MUSHROOM BOLOGNESE
1 cup panko bread crumbs
¼ cup finely grated Parmesan cheese, plus more for serving
½ teaspoon Italian seasoning
1 large egg
1 tablespoon water
1 pound fresh ravioli
1 tablespoon extra-virgin olive oil
1 large bell pepper, diced
2 cups chopped mushrooms
⅓ cup walnuts, finely chopped
2 cups marinara sauce
- Preheat the oven to 425°. Place a wire rack on a rimmed baking sheet and coat with cooking spray.
- Combine breadcrumbs, Parmesan, Italian seasoning in a shallow dish.
- Whisk egg and water in a separate shallow dish.
- Dip ravioli in the egg mixture, letting excess drip off, then coat in the bread crumb mixture. Lightly coat the ravioli with cooking spray.
- Bake the ravioli until golden brown and crispy for about 15 minutes.
- Heat oil in a large saucepan over medium-high heat. Add bell pepper and mushrooms to cook, stirring until softened, about 4 minutes.
- Add walnuts, cook and stir for one minute.
- Add marinara sauce and cook for about 2 minutes.
Serve ravioli with sauce and parmesan.
